Yemeni Porridge (Called Al-Aseed) is a popular dish in Yemen that is easy to prepare. It consists of two main parts: the first is the porridge itself, and the other is the flavored mixture. 

As for porridge, it is white flour that is mixed with water in a certain amount to form a cohesive, wet form. As for the mixture, it is placed around it or inside it and it differs from one region to another. Some of it is peppered yogurt, and other regions put a mixture that contains small fish called (Wazf) or honey, and many other types.

Ingredients

Here are the Ingredients of  Yemeni Porridge With Broth :

Porridge

  • Two cups of flour.
  • Two cups of water.
  • Half a cup of milk.

The Broth

  • A small amount of flour.
  • A small amount of chicken broth.
  • A small pinch of table salt.

How to prepare

  • Bring a saucepan and put it on the fire, then add water to it and leave it to boil, then add a small amount of flour, milk, and a pinch of salt to it, then stir the ingredients together well.
  • Add the remaining amount of flour to the mixture and mix the ingredients together until the mixture becomes thick.
  • Transfer the mixture to a serving dish, then arrange it well.
  • Make the broth, by placing a pot on

    the fire, then add the chicken broth and a small amount of flour, and stir the mixture well until it becomes thick.
  • Pour the broth over the porridge and serve immediately.

Aseed Yemeni - Yemeni Porridge With Dates

Ingredients

  • A teaspoon of black pepper.
  • A small spoon of salt.
  • A teaspoon of black seed.
  • A teaspoon of white pepper.
  • A teaspoon of cumin powder.
  • A glass of liquid milk.
  • Half a cup of pitted dates.
  • A teaspoon of ground ginger.
  • A cup of brown flour.
  • A teaspoon of ground cumin.

How to prepare

  • Bring a deep saucepan and put it on a medium heat, then add the milk to it, and leave it until it reaches the boiling point.
  • Add the dates to the milk after it boils and leave it on the fire until it melts and becomes very soft.
  • Add to the mixture black pepper, white pepper, ground ginger, ground cress, salt, ground cumin and nigella, and stir the mixture well.
  • Add the brown flour to the mixture, stir it quickly, then bring a wooden spoon and continue to stir the mixture.
  • Remove the mixture from the heat, then knead it well so that its consistency is coherent and thick without lumps, then return the mixture to the fire for several minutes, then raise it.
  • Bring a serving plate and grease it with ghee and a little honey, then pour the porridge in it and serve it hot.
